Ingredients: 2 c. coarsely grated potatoes 2 eggs, separated l t. salt 1 rounded T. flour or matzah meal 1 onion, grated
Combine potatoes, egg yolks, salt, flour and onion. Beat egg whites and fold into the mixture. Drop by the spoonful in a skillet with 1\2 inch of sizzling oil. Fry latkes on both sides until golden brown. Drain on paper towels and serve hot with sour cream and\or apple sauce.
